Traditional Recipe for Ugadi

Ugadi, the vibrant New Year festival of South India, is celebrated not only with prayers and rituals but also with traditional festive foods that symbolize the flavors of life. Among these, Mavina Shorba (Raw Mango Soup) and Mavina Rasam hold a special place on the Ugadi dining table. Prepared with raw mango, spices, and local ingredients, these dishes capture the essence of the season, offering a perfect balance of tangy, spicy, and aromatic flavors. Mavina Shorba is a traditional South Indian dish that is prepared in festive occasions in Karnataka and Andhra Pradesh. It is an easy soup that has tangy, mildly sweet, and spicy flavors. It is very popular in Karnataka that is refreshing, slightly spicy and comforting. It is also known as Appe Huli, Mavina Saaru etc.

Place a pan on the stove. Add the chopped raw mango, turmeric powder, green chilies, and water. Boil until the mango becomes soft.

Step 2: Mash or blend

Mash the cooked mango pieces using clean hands or a masher. Alternatively, transfer the mixture to a blender and blend until smooth.

Step 3: Seasoning

Add salt and jaggery (if using). Let it simmer for 3–4 minutes.

Step 4: Prepare the Tempering

Heat ghee or oil in a small pan. Once hot, add mustard seeds and allow them to splutter. Then add cumin seeds, hing, curry leaves, and dried red chilies. Sauté for a few seconds.

Step 5: Combine

Pour the tempering over the mango shorba and mix well.

Step 6: Garnish and Serve

Garnish with chopped coriander leaves and serve hot.

Mavina Rasam is a traditional raw mango rasam made during mango season. It has a beautiful balance of tangy, spicy, and mildly sweet flavors.

Take the above ingredients in a pan, dry roast them lightly. Add little water and make thin paste using mixer.

Fresh coriander leaves (chopped)

Place the diced raw mango in a saucepan, add turmeric and water, and cook over medium heat until the mango turns tender and soft.

Step 2: Mash & add dal

Gently crush the softened mango pieces. If you’re using cooked toor dal, stir it thoroughly until it is well combined.

Step 3: Add ground masala

Stir in the ground rasam masala paste, then season with salt and jaggery. Allow the mixture to cook on a gentle simmer for about 5–7 minutes, until it releases a rich aroma.

Step 4: Prepare Tempering

Warm some ghee in a small tadka pan. Once hot, add mustard seeds and let them crackle, then stir in hing and curry leaves. Immediately drizzle this fragrant tempering over the rasam.

Step 5: Garnish & Serve

Sprinkle chopped fresh coriander on top and enjoy piping it hot alongside steamed rice.

Mavina Chitranna is a traditional festival dish that is prepared on the day of Ugadi. It is the authentic taste of Karnataka – simple tangy recipe that is prepared mainly with rice and grated mango.

Step 1: Cook the rice in a pressure cooker and set it aside to cool slightly.

Step 2: Grate the raw mango and place it in a separate bowl.

Step 3: Heat oil in a large kadai (wok) over medium flame.

Step 4: Add 1 teaspoon of mustard seeds and let them crackle. Then add 1 teaspoon of urad dal and 1 teaspoon of channa dal. Sprinkle a pinch of hing and add a few curry leaves.

Step 5: Add 2 tablespoons of peanuts and sauté for a few minutes until they turn crisp and lightly roasted.

Step 6: Stir in the grated raw mango, chopped green chilli, and ¼ teaspoon of turmeric powder. Cook for a few minutes until the mango softens and the raw aroma fades.

Step 7: Add the cooked rice to the kadai and season with salt as needed. Gently combine everything using a large spoon, making sure the rice grains remain intact.
